American Airlines works with chefs to improve inflight meals

American Airlines has announced improvements to its inflight dining programme following collaborations with two chefs – Richard Sandoval and Marcus Samuelsson. From 1 October, the carrier will offer signature menu items designed by Mr Sandoval – who specialises in modern Latin cuisine – in premium cabins on flights between the US and Europe, Asia and Latin America.

The range of new culinary options on offer to passengers will include lemongrass marinated chicken breast with yucca puree, chayote salad with a citrus sauce, and halibut with truffle corn salsa and sweet potato puree.

Dishes created by Mr Samuelsson – including a turkey and chutney sandwich and breakfast biscuits – will be available on American Airlines’ domestic flights of more than two hours in length from 1 October.

Rob Friedman, the carrier’s vice president of marketing, said: ‘Chef Sandoval and Chef Samuelsson – two highly talented members of the culinary community – will further enhance the onboard travel experience for our customers by providing a broader range of options to satisfy our customers’ diverse tastes.’
